Why those pro-high fructose corn syrup commercials are bullshit

WHY THOSE PRO-HIGH FRUCTOSE CORN SYRUP COMMERCIALS ARE BULLSHIT "You know what they say about high fructose corn syrup?" 1. It's a cheap, chemically processed sweetener present in many packaged foods that has no nutritional value. 2. It has a higher fructose to glucose ratio than table sugar at 55% to 45% versus 50% to 50%. 3. Fructose converts into fat more than any other sugar. (source: Yale National Initiative http://teachers.yale.edu/curriculum/search/viewer.php?id=initiative_08.06.10_u) "It's made from THE HFCS PROCESS: corn – no artificial ingredients!" Cornstarch treated with an enzyme produces shorter chains of sugars called polysaccharides called alpha-amylase treated with an enzyme called glucoamylase to break down these chains further yields the simple sugar glucose treated with an enzyme called glucose-isomerase to convert the glucose to a mixture of 42% fructose and 50% this mixture is back-blended with the original mixture to achieve a concentration of 55% fructose glucose with other sugars mixed in liquid chromatography increases the fructose to 90% result: HFCS (source: Yale National Initiative http://teachers.yale.edu/ curriculum/search/viewer.php?id=initiative_08.06.10_u) Would you call that natural or artificial? In 2010, The Corn Refiners Association tried to change the name of HFCS to "corn sugar." Michael Pollan, author of "The Omnivore's Dilemma," suggested they use “enzymatically altered corn glucose" instead. JUST BECAUSE IT'S MADE FROM CORN DOESN'T MAKE IT NATURAL. Other ingredients made from corn maltodextrin ethyl lactate fructose saccharin polydextrose vanilla extract sorbital sucrose calcium stearate xanthan gum citric acid cellulose inosital di-glycerides ascorbic acid gluten хylitol ethel acetate alpha tocopherol citrus cloud emulsion "It's O.K. in moderation!" 47% MORE Since 1985, the average American's annual consumption of HFCS has gone from 45 pounds to 66 pounds. 1985 2012 (source: The Omnivore's Dilemma by Michael Pollan) cereals Sweet & Low granola bars canned fruits and vegetables tomato sauce BBQ sauce salad dressing sodas jelly Worcester sauce Cheez-Its margarine peanut butter hamburger meat Twinkies It's hard to moderate an ingredient that's present in so much of our food, MM hot dogs cheese Kool-Aid Ketchup syrup yogurt candy bars cough syrup SUCH AS: ice cream crackers bread juice pepperoni THE REAL PROBLEM WITH HFCS Research on whether HFCS is worse than table sugar is still unclear – but that's not the issue. USDA recommends 10 to 12 teaspoons of added sugar (including HFCS) a day. That's the amount in a single can of soda. Add to that the cup of yogurt from breakfast, the ketchup with your fries, the bread and deli meat on your sandwich, the Ranch dressing on your salad, the tomato sauce in your spaghetti... Soda WHY? HFCS is hiding everywhere t's subsidized. -50¢ Chip -$ = 1 bushel of corn gets a 50-cent subsidy from the US government, making corn cheaper than sugar. High-caloric, unhealthy foods with HFCS are The biggest predictor of obesity is income level. cheaper than whole foods. IT'S NOT ABOUT SUGAR VERSUS HFCS It's about knowing what's really in your food so you can control how much of it you eat. It's about the right every person has to healthy foods, no matter what their income level. It's about not letting a campaign sponsored by a billion-dollar industry pull the curtain closed between you and your food. Se matadornetwork INFOGRAPHIC BY MANUELA MONTERO
