HOW TO USE A CHEMEX Based on a standard 40 oz Chemex, using a 1:16 coffee to water ratio. 1 Measure out 45 grams of coffee and grind coarser than standard drip. 2 Insert filter, with 3 folds facing the spout. Pre-rinse with water just off a boil. 3 Discard water, add coffee, and give a gentle shake to even out grounds. 4 Place Chemex on scale, tare to zero, and start timer. 5 Pour in just enough water to saturate the grounds. Let bloom for 30-60 seconds. 6 Pour water in an even stream into the center, in a circle no bigger than a half dollar. 7 Continue pouring until the scale reads 720 grams. 8 Once the water has completely drained, remove filter, pour and enjoy! cupGspoon cupandspoonchicago.com
