Warming Winter Cocktails to Get Toasty on Cold Nights

WARMING WINTER COCKYAILS = to get toasty = ON COLD NIGHTS BLIZZARD Makes 1 cocktail INGREDIENTS 12 oz Irish whiskey or rum 1 cup hot coffee 2 oz hazelnut liqueur Whipped cream ½ oz Irish cream liqueur DIRECTIONS 1. In a glass coffee mug, stir together whiskey, hazelnut liqueur, and Irish cream. 2. Top with coffee and stir. 3. Add a dollop of whipped cream. HOT SPICED WINE Makes 12 cocktails INGREDIENTS 2 bottles light-bodied red wine, such as Pinot Noir or 2 cardamom pods, crushed Cabernet Franc 1 cinnamon stick 3-inches long, 14 cups granulated sugar crushed Strips of zest from 1 orange 1 clove, crushed Strips of zest 1 star anise, from 1 lemon crushed 3 black ½ cup kirsch (optional) peppercorns, crushed DIRECTIONS 1. Place crushed spices in a tea ball or small square of cheesecloth. Bring spices, wine, sugar, and orange and lemon zests to gentle simmer. 2. Once the sugar dissolves, remove the pan from the heat. 3. Remove tea ball and stir in kirsch. APPLE SPICED BOURBON TODDIES Makes 4 cocktails INGREDIENTS 1 quart (4 cups) fresh apple cider Juice of 1 lemon 1 cinnamon stick, plus more for garnish 1 cup bourbon 2 whole star anise DIRECTIONS 1. Bring cider, cinnamon, and star anise to a simmer over medium heat. 2. Cook until liquid reduces by half, about 10 minutes. 3. Add lemon juice and bourbon; stir until warmed through. 4. Garnish with cinnamon stick. HOT HONEY LEMON WITH VODKA Makes 3 cocktails INGREDIENTS ½ cup honey 1-2 cinnamon sticks 4 cups water Vodka, to taste 1 lemon, zested and sliced DIRECTIONS 1. Bring water, cinnamon, honey, and lemon zest to a simmer for 30-45 minutes. Keep covered. 2. Add vodka to taste. 3. Garnish with lemon slices. HOT GIN PUNCH Makes 12 cocktails INGREDIENTS 24 oz gin 3 cloves 24 oz Madeira 1 oz fresh wine lemon juice 6 lemon twists 1 orange slice 1 pinch ground 1 tsp ground nutmeg cinnamon 3 chunks 1 tsp brown pineapple sugar 2 ozs honey DIRECTIONS 1. Simmer all ingredients over low heat for about 20 minutes. 2. Pour into punch bowl or teapot. WHISKEY HOT COCOA Makes 5 cocktails INGREDIENTS 3 cup cocoa 32 cups milk powder 6 ozs Irish 34 cup sugar whiskey Pinch of salt FOR THE WHIPPED CREAM 2 cup whipping ½ tsp vanilla cream extract Cinnamon or 2 tsp powdered cocoa powder to garnish sugar DIRECTIONS 1. Simmer milk, cocoa powder, sugar, and salt over medium heat; whisk until smooth and creamy. 2. Remove from heat and add whiskey. 3. In a cool metal bowl, whisk cream, powdered sugar, and vanilla until stiff peaks form. 4. Top with a dollop of whipped cream, sprinkle cinnamon or cocoa. DIRTY CHAI TODDY Makes 2 cocktails INGREDIENTS For the Chai: 5-6 pink 8 oz half-and-half peppercorns, crushed 12 inch piece fresh ginger, 4 oz water peeled and flattened 1 cinnamon stick, 2 tbsp turbinado broken in half sugar 2 black cardamom 2 sachets pods, crushed black tea For the Dirty Toddy: 2 oz espresSo 2 oz bourbon DIRECTIONS 1. Bring half and half, water, spices, and sugar to a boil and simmer for 8 minutes, stirring occasionally. 2. Remove from heat, add tea sachets, and steep for 5 minutes. 3. Remove tea sachets, strain out spices, and split chai between two teacups. 4. Add one ounce of espresso and one ounce of bourbon to each cup. SPICED PUMPKIN CIDER Makes 2 cocktails INGREDIENTS 1 cup pumpkin 22 cups puree apple cider 12 tsp pumpkin 3 cup spiced pie spice rum 1 cinnamon stick DIRECTIONS 1. Bring pumpkin puree, apple cider, pumpkin pie spice, and cinnamon stick to a boil. 2. Reduce heat to low and simmer for at least 20 minutes. 3. Strain to remove clumps and cinnamon stick. 4. Add rum and mix. BISHOP Makes 4 cocktails INGREDIENTS 1 navel orange 1 bottle Ruby Port 8 whole cloves DIRECTIONS 1. Preheat oven to 400° Fahrenheit. 2. Stud orange with cloves and roast until browned and soft, about 1½ hours. 3. Quarter orange, then bring orange quarters and port just to a simmer. 4. Remove from heat; serve warm.
