MORNING JOLT The Perfect ESPRESSO Shot The term café-espress has been used since the 1880s and means: Coffee made to order, expressly for the person ordering it Espresso was invented for workers in a hurry. FRESH COFFEE Made from fresh beans Ground just before brewing Brewed just before drinking The Best Sip: How to Make an Espresso Shot Before starting, preheat the portafilter and cup. • Run a shot of water through the portafilter into the cup. • This ensures a consistent temperature. STEP 1: GRIND • Grind texture is important for shot quality: • Grind beans at home to enhance flavor Too fine: Shot will be slow, over-extracted with a bitter and burnt taste Too coarse: Shot will be fast and under-extracted with a weak and watery consistency and sour notes Just right: Texture should be similar to granulated sugar STEP 2: DOSE • Dose is the amount of coffee grounds put into the portafilter. The proper dose for a double shot should be between 14 to 18 grams. May depend on espresso machine, look at owner's manual for an exact amount STEP 3: TAMP • Tamping ensures uniformity of extraction by leveling and packing the grounds for equal water contact • Proper tamp method 1.
