FILLET GLOVES PROTECT YOUR HANDS WHILE DEAL- ING WITH A SHARP KNIFE & A SLIPPERY FISH. MAKE A SINGLE CUT 1.WHERE THE HEAD ENDS & THE MEAT BEGINS, ALL THE WAY THROUGH. DIAGONAL CUT BEHIND FIRST FIN. ONCE YOU PASS 3. THE DORSAL FIN, PUSH THE KNIFE ALL 2. INSERT THE KNIFE IN THE WAY THROUGH.USE DOWN WARD PRESSURE ABOUT AN INCH, & RUN THE KNIFE DOWN THE SIDE OF & CUT ALL THE WAY OUT TO THE TAIL. THE DORSAL FIN. REPEAT STEPS -3 ON THE OTHER SIDE MAKE SEVERAL STRAIGHT & SHALLOW I. CUTS TOWARDS THE TAIL, TO SEPARATE THE FILLET FROM THE CARCASS. DONT USE MUCH PRESSURE OR YOU WILL GET BONES IN YOUR FILET.
