STORING FRESH TRUFFLES Truffles are best enjoyed when eaten fresh but they can be stored for later use, too. Do it right, and they may just last longer than you had originally planned! Where to start? Ask these questions: 3 - 4 weeks DO I WANT TO STORE THEM SHORT-TERM? 6 - 10 months DO I WANT TO STORE THEM LONG-TERM? Gently wrap each truffle in paper towels. Individually wrap truffles tightly in metal foils. Put them all inside an airtight container. Place them in a ziplock freezer bag. Put the container in the coldest spot of the fridge. Squeeze as much air out before sealing, then freeze. QUICK TIP QUICK TIP Change paper towels regularly to avoid moisture. Do not thaw; cook or shave while still frozen. STORING TRUFFLES WITH EGGS AND RICE Store them with eggs to infuse yolks with its aroma. Store them in rice to protect their natural moisture.
