Storing Fresh Truffles

STORING FRESH TRUFFLES Truffles are best enjoyed when eaten fresh but they can be stored for later use, too. Do it right, and they may just last longer than you had originally planned! Individually wrap truffles tightly in metal foils. Put them all inside an airtight container. Place them in a ziplock freezer bag. Put the container in the coldest spot of the fridge. Squeeze as much air out before sealing, then freeze. QUICK TIP QUICK TIP Change paper towels regularly to avoid moisture. Do not thaw; cook or shave while still frozen. STORING TRUFFLES WITH EGGS AND RICE Store them with eggs to infuse yolks with its aroma. Store them in rice to protect their natural moisture. The key to storing fresh truffles is doing day-to-day monitoring. Changes in quality are bound to happen, and given how precious they are, storing them correctly is definitely worth the effort.
