Recipe: Ricotta, tomato & spinach frittata

RICOTTΑ, ΤΟΜΑΤΟ & SPINACH FRITTATA RECIPE YOU WILL NEED 1 tablespoon olive oil 1 large onion, finely sliced 300g cherry tomatoes 100g spinach leaves Small handful 100g ricotta 6 eggs of basil leaves LET'S MAKE THIS THING! 1. Heat oven to 200C/180C fan/gas 6 2. Cook the onion for 5-6 minutes, in a large frying pan, until softened and lightly golden 3. Add the tomatoes and toss for 1 minute to soften 4. Remove from the heat, add the spinach leaves and basil, and toss together to wilt a little 5. Transfer all the ingredients to a greased 30cm x 20cm rectangular baking tin 6. Take small scoops of the ricotta and dot over the vegetables 7. Beat the eggs well and add seasoning 8. Pour the eggs over the vegetables and cheese 10. Serve with salad! 9. Cook in the oven for 20-25 mins until pale golden and set
