MAKE THE SAUCE Ingredients 2 thsp frying ail 1 large sliced orion 0 3 tbsp pine nuts I cup Tahini (also known as Tahina) 200g beef or lamb meat, finely ground 200g white fine burghul wheat I tsp salt ½ tsp all spices 0h tsp cinnamon powder 2% cups bitter orange Juice (Seville oranges or Bou Sfcir orangcs) I tsp dried basil 1 minced onion 3/4 cup lermon juice Icup becf stock (preferably hamemade) I Combinc meatball ingrediants Z Form the kibbch into balls (cgg sizc) I tbsp Pomegranate Molásses (optional) o I tsp salt Y½ tsp pepper h cup chickpeas, peled to garnish 3 With index finger, makc a hole on onc cnd of the ball and start turning the kibbch until you get thin and hollow cg-shapcd balls O Pinch other cnd to closc O Fry the onion until brown and soft Z Add the pinc nuts and fry 3 Mix the tahini, bitter orange and Icmon juicec. Stir until wdll-mixed . Put the kibbch in a pre-heated oven dish G Roast for about 25 min add to the oricns O lct it simmer Add the stock, molasscs, salt, and popper Simmer for 20 min >>> 3. PREPARE THE DISH Add the kibbeh balls and simmer gently for a few minutés Garnish with chickpeas - Serve with steamed rice alwadi alakhdar
