It's an intensive process - as painstaking as cultivating the delicate beans themselves – but we truly love every moment of it, and it all adds up to an exceptional sip for you. CRAFT COFFEE BY THE NUMBERS HOURS of TASTING 55 10% 20 CUPPING SPOONS To really evaluate coffee, you must slurp. Yes, it's exactly what mom always told you not to do. Similar to tasting wine, slurping it through your teeth is the best way to take in all the flavor notes. Our evaluation team works around the clock, senses in overdrive, looking for that extraordinary brew. When we say this is a labor of love, we're not kidding. ACCEPTANCE RATE 30+ It's our job to be picky. If it doesn't wow our evaluation am, then it doesn't make the cut (or the cup, rather). ЗЕЕВ COFFEES That's the average number we evaluate on our cupping table each month, in order to whittle it down to three. 0 The number of days our founder Mike has regretted leaving his former job as a corporate lawyer.
