The use of pork is most common, though in areas that thrive on ranching, such as Texas, beef is more popular due to its availability. Polynesia In many Polynesian cultures, earth ovens are used to cook up whole pigs during gatherings. A hole is dug in the ground and a fire started, then meat is placed inside- among the smouldering coals. East Asia The Chinese term for roast pork, char siu, means "fork roast," referring to its traditional method of cooking, wherein meat is skewered with long forks and roasted over an open fire. ...So, what's not to love?
