Step 3: Distillation & Aging Step 4: Bottling After fermentation, the tequila is distilled multiple times. Next the alcohol is stored in barrels for 2 months to multiple years. The older the tequila, the darker the color. Tequila with 100% Agave may only be produced in Guanajuato, Jalisco, Michoacán, Nayarit, and Tamaulipas. Non-100% agave tequila, or "mixtos," can be bottled anywhere.
