THE FACTS ABOUT TEQUILA Tequila is a distilled spirit that is produced only in the region of Tequila in Mexico. Regulated by the Mexican government, this national symbol is the heart of Mexican culture. Whether your preference is Blanco, Joven, Reposado, Añejo, or Extra Añejo, Tequila comes in many colors and many different brands. WHERE TEQUILA IS PRODUCED Agave Production Tequla Production THE PRODUCTION PROCESS Step I: Harvesting Step 2: Cooking The Jimador (Harvester) removes the agave plant's leaves down to the piña (heart) of the Iagave. Only the piña is used to make tequila. Cooking the piña in an oven makes extracting sugar easier. The cooked piñas are crushed in order to release the aguamiel (juice) that will be fermented. Step 3: Distillation & Aging Step 4: Bottling After fermentation, the tequila is distilled multiple times. Next the alcohol is stored in barrels for 2 months to multiple years. The older the tequila, the darker the color. Tequila with 100% Agave may only be produced in Guanajuato, Jalisco, Michoacán, Nayarit, and Tamaulipas. Non-100% agave tequila, or "mixtos," can be bottled anywhere.
