The classic recipe of the Olivier salad The popular recipe was invented in the mid-19th century by French chef Lucien Olivier, who owned the Hermitage restaurant in downtown Moscow's Trubnaya Ploshchad Ingredients Preparation 200 g fresh lettuce (Iceberg or Chinese lettuce) 100 g marinated capers Dice all ingredients, except caviar, capers, and soya paste 5 hard Meat from 25 boiled shelled crayfish (can be replaced with canned lobsters) cucumbers boiled eggs 2 100 g pressed black caviar 2 boiled 10-15 3-4 grouse hens gherkin pickles Place diced ingredients in a bowl, add caviar, capers, and soya paste tablespoons soya paste 3 Add Provencal dressing* (can be substituted with mayonnaise) * Provencal dressing • French vinegar • 2 fresh yolks • 400 g olive oil Mix РИАНОВОСТИ @ 2009
